Sparkling Matcha Lemonade
As the July sun warms the garden and the days stretch out, our tea-drinking habits often undergo a seasonal shift. While we always cherish that comforting, steaming cup of green tea to start our mornings, the midday heat calls for something crisp, cooling, and revitalising.

Ingredients
2 tsp Qi Teas Organic Matcha Powder
6 tbsp warm (not boiling) water
300ml sparkling water (chilled)
100ml freshly squeezed lemon juice
2 tsp honey, agave, or maple syrup (optional, to taste)
Ice cubes
Garnish: Two thin slices of lemon and two sprigs of fresh mint
Method
Whisk the Matcha: Sift your matcha powder into a small bowl to remove any clumps. Add the warm water and whisk vigorously—using a bamboo whisk or a small milk frother—in a zigzag motion until a smooth, frothy paste forms.
Prepare the Base: Divide the fresh lemon juice and your chosen sweetener between two tall glasses. Stir each well until the sweetener has fully dissolved.
Add the Sparkle: Fill both glasses with ice cubes and pour 150ml of chilled sparkling water into each.
Create the Gradient: Slowly pour half of your prepared matcha shot into each glass over the sparkling water. Because of the difference in density, you will see a beautiful, layered gradient effect as the vibrant green tea settles into the lemonade.
Serve: Garnish each glass with a fresh lemon slice and a sprig of mint. Give them a gentle stir just before your first sip to enjoy the perfect harmony of flavours.
